I love bananas and my kids loved it too. Who doesn’t like bananas anyway? They’re wonderfully sweet with rich and creamy flesh in it. They are just so convenient to enjoy by all ages, from infants to elders.
Last Sunday, my husband went to work so it was just the kids and me at home. To keep the kids occupied, I thought we could bake some cake. Looking through the cupboards with available ingredients, I’ve come up with an idea of making banana muffins instead. So I’ve looked into the internet for recipes with it and this is the easiest one I’ve seen from All Recipes website.
Banana muffins is a great snack for kids and so as for adults too. A great way to use up those ripe bananas as well rather than binning them. Best of all, it’s just so quick to make.
3 large Bananas
200 grams Plain flour
150 gram Caster Sugar
75 grams Butter (melted)
1/2 teaspoon Salt
1 teaspoon Bicarbonate Soda
1/2 teaspoon Baking Powder
Preheat oven to 180 degrees celsius.
Lined up the muffin tray with muffin cases.
Sift together all the dry ingredients. Flour, baking powder, bicarbonate of soda and salt. Then set aside.
On the other, mash banana with fork in a big bowl.
Add in the sugar, egg and melted butter on the mashed banana. Combine well.
Fold in flour mixture and mix until smooth.
Add in Sultanas (optional). I have included sultanas in this recipe because I have some in the fridge.
Spoon the mixture evenly into the muffin cases in muffin tray which was prepared earlier.
Bake in the preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped.
Here goes the banana muffin with sultanas, so yummy and so moist in the inside.
